Amarula truffle
Ingredients
- 750 ml Oreo cookie crumbs
- 79 ml Amarula Cream liqueur
- 120 grams powdered sugar
- 2 tbsps. light corn syrup
- Cocoa powder (for coating).
Method
- Mix all the ingredients in a bowl
- Roll into 3cm balls
- Coat the balls with the cocoa powder
- Refrigerate overnight.
Amarula malva pudding
Ingredients
- 15 ml baking soda
- 45 ml apricot jam
- 45 ml olive oil
- 60 ml Amarula Cream liqueur
- 15 ml vinegar
- 625 ml sugar
- 875 ml flour
- 375 ml milk
- 500 ml sugar
- 500 ml cream
- 375 ml water
- 6 eggs
- salt
- 125 grams butter.
Syrup ingredients
- 500 ml sugar
- 500 ml cream
- 375 ml water
- 125 g butter
- 60 ml Amarula cream liqueur.
Method
- Dissolve the baking soda in the vinegar
- Mix the eggs with the sugar until spongy
- Add all liquid ingredients into bowl with egg and sugar mix
- Add flour and salt into mixture until it becomes smooth batter
- Pour batter into baking tray
- Bake for 25 to 35 minutes
- Mix syrup ingredients
- Boil syrup ingredients in pot for three minutes
- Add Amarula and pour syrup mix over malva pudding.
Amarula ice-cream
Ingredients
- 250 grams cream cheese
- 250 grams mascarpone
- 250 grams crème fraiche
- 200 grams peanut brittle
- 250 ml sugar
- 80 ml liqueur (Amarula Cream)
- 2 eggs.
Method
- Whisk all ingredients in a bowl until well blended
- Put the bowl into a freezer for three to four hours in the freezer
- Add Amarula Cream and peanut brittle to serve.
Amarula fudge
Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1 cup liqueur (Amarula Cream)
- 3 tbsps. unsalted butter (if salted, leave out the 1/4 tsp salt)
- 3 tbsps. cocoa powder
- 3 tbsps. corn starch
- 3 tbsps. peanut butter
- 1/4 tsp. salt.
Method
- Turn the stove to a low heat; mix the sugar, brown sugar, cocoa powder, cornstarch, Amarula Cream liqueur, and salt in a pot until smooth and a little bit thick
- Add butter and peanut butter to the mixture and stir until it starts to thicken further
- Cool to room temperature
- Cover mixture and refrigerate.
Non-bake Amarula cheesecake
Ingredients:
- 200 grams Oreo biscuits
- 100 grams butter (melted)
- 500 grams cream cheese (softened to room temperature)
- 130 grams caster sugar
- 30 grams dark chocolate (melted)
- 200 ml whipping cream (very cold)
- 150 ml liqueur (Amarula Cream)
- 4 tsps. powdered gelatin.
Method
- To create the non-bake base, crush the biscuits either in a bowl or a food processor
- On a low heat stove, add the butter to a pot and wait until melted.
- Then add biscuit crumbs until it becomes a sandy texture
- Whip the cream until it is stiff
- In a small bowl, mix gelatin with the Amarula Cream liqueur and let it stand for three minutes
- Using a food mixer, mix the cheese and sugar until it is light and fluffy, then add the gelatin and liqueur to the mix
- After all the mixing, pour the bowl’s contents over the biscuit base and refrigerate for two hours or until set.
